Why is the curd that I set with this milk a bit runny?
Desi cow milk by nature is of a thin consistency which is why it is good for our body because it is easily digestible. Hence, you cannot compare it with curd set from buffalo milk or packaged milk which has been processed to get a thick consistency.
Even though the curd set from A2 desi cow milk is a bit runny in nature, it is of a very high nutritional value when compared with any other kind of curd. It’s natural, full of pro-biotic and wholesome.
Also setting perfect curd depends on many factors like the room temperature, the temperature of the milk and the quantity of curd you are using to set. So please make sure that you take care of these factors when setting your curd.
Why isn’t the cream (malai) thick on the milk?
You cannot compare the malai of desi cow milk with packaged milk or buffalo milk. The reason is that in packaged milk, the milk is processed to get consistency in the fat content. Buffalo milk by nature is thick and has thick malai on it. However thickness of the milk does not necessarily make it healthy milk.
It has been scientifically proven that the nutritional value of desi cow milk is far greater when compared with any other kind of milk (packaged/buffalo or Jersey/HF cow breeds). The A2 Cow milk fat (malai) though thin is the GOOD FAT. Also, since cow milk is not thick by nature it is easily digestible.
Our milk in its natural state is the best for our well-being and builds immunity in the long run to provide protection from diseases.
Why does the thickness of the milk change unlike the packaged milk?

The thickness and taste of our milk might vary sometimes because it is influenced by multiple factors like the seasonal feed of the cow, the weather and also the lactation cycle of our cows.
